Zur Güldenen Pfanne

Timber-framed house Zur Güldenen Pfanne, Lehmkuhle 2 in Havelberg

At Lehmkuhle 2 chef and owner Manfred Hippeli cooks seasonal and regional food: fish, lamb, horse and game from the Elbe-Havel country, plus vegetarian and vegan plates including his seaweed specials. The house has a long life as an inn and is known beyond the town.

Manfred Hippeli

Manfred Hippeli has run the Güldene Pfanne with Monika Hippeli since 1997. He is a known name in the Altmark kitchen scene and in the tourist association, was among other things chair of the DEHOGA district group Havelberg and appears as a seaweed sommelier. Television viewers know him from pieces on ZDF “Volle Kanne” about regional and vegan cooking in the Stendal district. On Instagram he shares kitchen and country under @instakoch.manfred.

His focus is fresh regional produce: fish just landed, game from the Elbe-Havel country, lamb and horse too. Beside that sit lighter, calorie-aware plates and a vegan line with seaweed, which he uses as a food for the years ahead.

Kitchen and specials

The menu and the boards outside change with the season and what is in. Typical are game steaks and game pans, lamb, horse roulade grandmother’s way, grilled duck, rump steak, zander, salmon and smelt (in spring). Wednesday is schnitzel day. The “Hansepfanne” with pork loin steak, schnitzel and bratwurst is one of the hearty classics.

Beside that sit vegetarian and vegan plates, including seaweed dishes, and menus to order: starter, main and dessert as agreed with the kitchen, also in a vegetarian version. The wine cellar is counted among the larger ones in northern Saxony-Anhalt and holds wines from the German regions and from many countries.

For many years the Güldene Pfanne has taken part in “Altmark kocht” and shows regional and historic recipes in a present-day form.

House and place

The rooms in Lehmkuhle look back on more than 250 years as an inn. In 1982 they were rebuilt as the “Güldene Pfanne”; since 1997 Monika and Manfred Hippeli have run the house. The timber-framed building with a covered terrace in the yard sits on a quiet street. Parking is in Lehmkuhle itself.

To the town island, the harbour and the other restaurants the ways are short. For guests who want regional cooking and a host who knows the craft, the Güldene Pfanne is one of the standing addresses in Havelberg.
